Comment: For all you Italo-philes, these anchovies are the real thing! They are essential for adding that "depth of flavor" that Mario Batali and others reference. They are expensive, but will last indefinitely. Be sure to take them out of the can in which they are packed, and place them in a glass or food grade plastic container, and cover them with additional kosher salt. Ciao!

Whole anchovies preserved in salt. These anchovies are preserved in rock salt in a large, round aluminum can -- the way most Italian chefs prefer them. Wash them in cold water and remove the bones before using. Once open, these anchovies will last almost indefinitely. Simply keep them covered in salt and store them in a cool cupboard.
