Also known as Ajwan, Ajwain, Ajowan, Bishop's Weed, Carom, Ethiopian Cumin
Ajawan seed looks similar to caraway, celery and cumin seeds. When crushed, they have a Thyme-like aroma and may substitute thyme in smaller quantities. Some Indian recipes call this spice Lovage. Before using Ajawan seeds, crush them to release the flavor by rubbing them together with your finger tips.
Ajawan is very popular in Indian cuisine and is rumored to be used there to ease Asthma and indigestion. They are also popular with bean and lentil recipes for their ability to relieve flatulence. Excellent in savory breads such as Naan.
