Fresh, sun-dried tomatoes are a wonderful addition in breads, pastas, and dishes.
Sun dried tomatoes are rich tasting and intensely tomato flavored. Snip them and add them to your baking for outstanding breads, muffins, and scones. Rehydrate them in warm water for thirty minutes and add them to salads. Chop them and add them to soups, stews, and casseroles. Enhance your olive oil with sun dried tomato bits, 1/4 cup sun dried tomatoes for a half cup of olive oil. Add sun dried tomatoes to cook vegetables during the last five minutes of cooking. Use as a topping on pizzas.
For salads and other dishes for which you would like to have soft tomatoes, blanch your toamtoes for ten minutes in warm water. In soups, cassreoles, and breads and for baking, blanching is not necessary.
Sun dried tomatoes are rich in Lycopene. Fresh sun dreid tomatoes are still red in color, not hard and black.
